This Cucumber and Onion Salad will quickly become one of your go-to recipes this summer, it’s light, refreshing and incredibly simple to make.

With Memorial Day right around the corner I decided to make a simple salad that would be great for a backyard BBQ. This cucumber & onion salad is bursting with flavor and can be made ahead of time. I wanted an extra pop of color for our red, white and blue celebration so I added a handful of sliced grape tomatoes and love the extra layer of flavor that they add.
Cucumber and Onion Salad

Serves: 4-6
Ingredients
- 3 English cucumbers
- 1/2 medium-size Vidalia onion
- 1/2 cup sliced grape tomatoes (optional)
- 1/2 cup white vinegar
- 1/2 cup water
- 1 garlic clove, finely minced
- 2 teaspoons sugar
- 1 teaspoon salt
- black pepper to taste
Instructions
- Peel cucumbers, and thinly slice. Peel onion, and thinly slice. Combine cucumbers and onion and grape tomatoes in a large bowl.
- In a separate bowl, combine remaining ingredients, and pour over cucumbers and onion. Refrigerate at least an hour before serving.

Um you forgot to add the halved grape tomatoes?!
Hi Sue, the original recipe from the cookbook did not call for grape tomatoes so I did not include them when I posted the recipe. But, I’ve updated the recipe with the grape tomatoes so you can add them if you are like me and want to add a pop of color and flavor to this already delicious salad. Thanks!
