For me one of the hardest parts about working from home is lunch time. Sometimes I get so wrapped up in a project I forget what time it is and before I know it I have to rush out the door to get the kids from school. Unlike when I worked in an office there aren’t colleagues to go out to lunch with and it’s easy to make poor choices when you can graze on snacks all day. In an effort to make lunch a priority during my busy ‘work week’ I decided to try some new things. I love Mexican food so when I discovered these new Mexicana Frozen Bowls by Herdez I decided to give them a try and paired with my Spicy Guacamole Recipe I’ve got a new lunch time favorite!
There were several different options to choose from, but the Carnitas with Charro Beans caught my eye. Carnitas with rice and beans is one of our families favorite meals so if I can enjoy the flavors of this Mexican favorite without all the work I’m sold. I’ll admit I was a little leery, I mean how good could a frozen Mexican meal really be? I was pleasntly surprised, it was actually quite delicious. I whipped up some spicy guacamole and enjoyed my lunch with a corn tortilla. It was the perfect amount of food and the fact that it was so easy to make has me looking forward to lunch time. It’s a tasty and satisfying break from my normal lunch habits and I can even see serving these on those busy weeknights where we are running from one sports practice to the other.
Because in my opinion you can’t have Mexican food without great guacamole here is my recipe for Spicy Guacamole that is guaranteed to kick things up a notch.
- 3-4 Ripe Avocados
- Tomatoes
- 1 Orange
- 1-2 Limes
- Cilantro
- Jalapeno Salt
- Slice and scoop out the avocado flesh
- Mash the avocado with a fork until smooth
- Dice the tomatoes into small pieces, add to the avocado
- Finely chop the cilantro and add to the avocados
- Squeeze the juice from 1-2 limes
- Slice the orange into quarters and squeeze 1 quarter into the guacamole
- Sprinkle a dash of Jalapeno Salt, mix all ingredients and adjust according to level of spice you desire.
- Dig in and enjoy
The key to making this guacamole the best is the same ingredient I use in my Shrimp Ceviche, jalapeno salt. It gives it the spicy kick it needs without the hassle of chopping up fresh jalapenos with the perfect blend of salt.
I like to add lime, oranges and cilantro to my guacamole, the burst of citrus and spice in every bite is awesome. If I were going to be stranded on an island and could have any food I wanted I would pick chips and guacamole, it’s my favorite!
