Baked Artichoke Pesto Chicken

Now that school is back in session and we are getting back into the routine of schedules, homework, and sports practices.  And after a long summer of traveling, camping and lazy afternoons by the pool and eating out WAY too much, I’m finally getting back in the kitchen and focusing on making wholesome and healthy meals my whole family will love. This Baked Artichoke Pesto Chicken has just 4 ingredients and is perfect for those busy weeknights.

Our basil plant is thriving right now, and I decided to create one meal a week where I use basil so that I can use it up.  This week I decided to make homemade artichoke pesto.  This scrumptious sauce would be delicious slathered on garlic toasted bread or tossed with warm pasta, but I had recently picked up Open Nature® Air Chilled Chicken at Albertsons and decided it would be perfect with the homemade pesto.

Ok, you might be wondering what exactly is Open Nature Air Chilled Chicken?!  Open Nature Air Chilled Chicken is genuinely different chicken with highly desirable Omega-3 Fatty acids, up to 40% lower cholesterol and lower in saturated fat. Air-chilled chickens are individually processed in cold chambers with purified air., which results in 100% mouth-watering chicken flavor.

Lately I’ve been making lots of baked chicken recipes in an effort to provide healthier meals for myself and my family.  But, one of the things I always worry about is whether or not the chicken will turn out tough and chewy.  The one thing I love about this new product is that it’s naturally moist even when skinless which resulted in perfectly baked mouth-watering chicken. And with only 4 ingredients this is such a quick and easy meal you can throw together in no time at all.

As I mentioned I made homemade pesto with basil from my garden, but if you don’t want to make your own pesto you can always just buy a jar from the grocery store.  But, trust me when I tell you the homemade version makes a world of difference in the texture and flavor department, so give it a try!

Spray a baking dish with cooking spray and place the Open Nature Air Chilled Chicken in the bottom of the dish.

Next, spoon 1-2 tablespoons of the artichoke pesto sauce on top of the chicken and spread it out so that it coats the top of the chicken breast.

Add a slice of mozzarella cheese.

Top with sliced tomatoes and sprinkle with a dash of salt and pepper.

Place the baking dish in the oven at 350 degrees for 30 minutes, or until the chicken is cooked through.  Broil the chicken for the last two minutes of cook time to get a nice toasted top.

Pair your delicious Baked Artichoke Pesto Chicken with an Italian bread, spinach & tomato salad for a delicious and savory meal the whole family will love. 

This flavorful dish reminded me of something we would have eaten in Italy and we spent the entire meal reminiscing about our trip.  It was so much fun to watch our kids light up as we told them about the things we saw and ate while on our vacation. It’s just too bad we didn’t have some of that famous gelato to enjoy after dinner…oh well, maybe next time!
