The other night I made this Sausage and Spinach Pasta, a new family favorite. During the summer I like to plan easy meals that don’t require lots of prep or time in the kitchen. Let’s face it, I’d rather be hanging out at the pool but I still need to feed my family so I try to plan easy and healthy meals during the summer. It took less than 15 minutes to whip up this delicious meal and everyone loved it!
Ingredients:
1 package Artisan Fresh Chicken Sausage
1 pound Penne Pasta
Small yellow onion
2-3 garlic cloves
2 cups fresh spinach
1 cup cherry tomatoes
2 tablespoons olive oil
1 teaspoon balsamic vinegar
Mozzarella cheese
Directions:
Sauté sausage until cooked through about 8 minutes, place on paper towel lined plate and cover to keep warm.
Heat 1 tablespoon olive oil in pan; add chopped onion and sliced garlic, sauté until translucent. Add washed spinach and sprinkle with salt and pepper. Simmer 2-4 minutes until cooked and spinach is bright green. Add cherry tomatoes and cook until they start to burst. Add sausage, toss to mix. Remove from heat.
Meanwhile cook penne according to the directions on the package, drain. Toss spinach mixture and pasta together. Top with shredded mozzarella cheese before serving. Enjoy your healthy and delicious sausage and spinach pasta!
