Love is in the air and the sweetest holiday is just around the corner. This Valentine’s Day show your sweetheart how much you love them with decadent mini chocolate cakes with chocolate raspberry ganache. These mini cakes are a sweet finish to a romantic Valentine’s dinner and you’ll love how easy they are to whip up, just in time to celebrate with your loved ones!
We used to be the kind of couple that went out to a romantic dinner on Valentine’s Day, but after having kids we found ourselves celebrating more and more often at home. We traded in fancy restaurants for family-friendly celebrations like this fun “You Stole a Pizza My Heart” Valentine’s Day Pizza Party or our Cupid’s Cafe Valentine’s Day Dinner. While I love these family celebrations I also love being able to do something extra special for my sweetheart too. This year after the kiddos go to bed we will indulge with these rich mini chocolate cakes.
I am a big fan of celebrating everything from holidays to life’s little moments. Which is why I love partnering with Pillsbury™, they help make any baking occasion become a celebration without the hassle of making everything from scratch. These fancy little cakes are easy to make, especially when you use Pillsbury Devil’s Food Cake Mix and Pillsbury Filled Pastry Bag Cream Cheese Frosting.
Mix up the cake mix according to the directions on the package and then pour the mix into small ramekins. I used 4 ramekins to make 4 mini cakes, and used the remaining batter to make cupcakes for my kiddos.
While the cakes were baking I made the raspberry chocolate ganache. Once the cakes were cooled, place them on a wire baking rack and pour the ganache over the cake.
Use the Pillsbury Filled Pastry Bag Cream Cheese Frosting to pipe a large dollop of icing in the center of the cake. The first-ever pre-filled Pillsbury pastry bag makes frosting a fun activity for bakers of all skill levels, with little clean up and an impressive result.
Garnish with a fresh raspberry and sprig of mint.
Celebrate your sweetheart with this decadent dessert, and don’t worry you don’t have to tell them just how easy it was to whip up…it will be our little secret!
Don’t forget about the kiddos too, bake a special batch of cupcakes just for them and top with the Pillsbury Pastry Bag Cream Cheese Frosting and lots of pink and red sprinkles.
