My sweet friend Courtney’s from Pizzazzerie has a new book, Frostings, and ever since I got my copy I’ve been dying to try some of the recipes. The other night I decided to make a special dessert for my family and used the cookies and cream frosting recipe to make a decadent Cookies and Cream Brownies in mini dessert cups.
I rarely experiment with frosting. I usually stick to your standard butter cream or chocolate frosting, but Oh. My. Goodness. this cookies and cream frosting was heavenly! I was also surprised at how simple it was to make, I am a big fan of simple when it comes to cooking!
I baked some brownies and cut them into small pieces and placed them in my mini dessert cups. I alternated layers of brownies and the cookies and cream icing. To sweeten the deal I put an Oreo cookie on top.
These Cookies and Cream Brownies were rich, decadent and oh so good! The mini portions of this treat are perfect to serve at special occasions, yet simple enough to enjoy after dinner with the family.
