Today is Dr. Seuss’s Birthday and we couldn’t resist celebrating the amazing author and stories that have inspired reading in children for decades.
My sister teaches kindergarten and had reminded me that this event was coming up, but I honestly let it slip my mind until this morning when a friend dropped off her son so she could go to the school to participate in the activities with her kindergartner.
So I had to work with what we had on hand…here is our version of green eggs and ham that we had for lunch. My kids don’t really care for scrambled eggs so I made deviled eggs, which normally they eat. The green eggs didn’t go over very well at first, but eventually she tried it and realized she really did like “green eggs & ham.” I only had diced ham on hand so I decided to make some mini ham frittatas which were easy and everyone loved!

I love the green eggs idea! I teach kindergarten, and last year I brought my griddle to school to make scrambled eggs. While that experience was good, this is a way easier make-ahead way! Thanks!!
