Hi Giggles Galore Readers! It is Rachel from R & R Workshop and I’m back with a yummy Watermelon Blueberry and Coconut Salad recipe to share with you today.
It’s summer and that means Watermelon season is here. 🙂 We buy a watermelon at least once a week and love eating it with our meals or as a snack.
I wanted to find a yummy combination to change it up a bit and I had accidentally bought a ton of shredded coconut. I had this for breakfast one morning and loved it!
I currently am loving the combination of Watermelon and Blueberries but you could add any berries you like as well! The coconut adds just the right amount sweetness.
We love to grill in the summer and fruit is such a nice side dish.
Whip up this yummy recipe for the 4th of July too! All the colors are so pretty that it would make a great dish at your 4th of July party or BBQ 🙂
Fresh Watermelon, Blueberry and Coconut Salad
Ingredients:
4 cups Watermelon
1 1/2 cup Blueberries
1/2 cup Coconut (more if you would like)
Directions:
1. In a large bowl, add all fruit. Mix and serve.
