I am a HUGE fan of Tacos, Chips and Guac, and Frozen Margaritas…both with and without alcohol. I also pretty much love Cinco de Mayo, because tacos + parties = YASSSS! I spotted these fun cactus cups recently and knew with Cinco de Mayo just around the corner they would be a fun addition to our fiesta themed celebration. Especially when they are filled with a delightfully refreshing frozen Coconut Cream Margarita!
We recently had some friends over for dinner and we served Mexican Pizzas and Coconut Cream Margaritas. It was all so good, but this creamy drink definitely stole the show. I can’t wait to make them again for our annual Cinco de Mayo party this year. If you are planning on hosting a fiesta themed celebration this is the perfect signature drink. And believe it or not, the main ingredient that makes this drink so delicious and refreshing is a coconut cream popsicle! Get the recipe for this yummy coconut cream margarita below.
- 2 Orange Cream Popsicles - removed from their sticks
- 1 Cup Orange Juice
- 2 oz Tequila
- 2 oz Triple Sec
- ¾ Cup Ice
- Optional: 4 oz Coconut Water
- Remove popsicles from their sticks.
- Add Popsicles, Ice, Orange Juice, Tequila, and Triple Sec to blender and mix until smooth.
- Serve in cute cactus glasses with an orange wedge inside.
- Optional: Substitute Coconut Water for liquor and enjoy a non-alcoholic version
I made two versions of this drink for our guests, one with alcohol and one with out. I will be making both versions throughout the hot summer months! It’s a nice refreshing, cool drink full of fruity flavor that makes you feel like your relaxing on the beaches of Mexico.
