It’s my favorite time of year once again- autumn is in the air and the season of harvests, festivals and spectacular changes are upon us. I think I love this season so much because it embraces my need for change. While most people avoid change at all cost, I crave the need to mix things up. Autumn is all about change. Change in temperature, change in clothing, a change in the colors of leaves and a change in my morning routine. As the weather gets cooler it’s a time where I take a moment to pause and savor the richness of Autumn. Quiet mornings of reflection are somehow more awe inspiring in the fall with pumpkin chocolate chip cookies and aroma of rich, warm coffee.
As soon as fall arrives I start baking batches of these easy and delicious pumpkin chocolate chip cookies. I’m 100% in the autumn sate of mind and there is no turning back. Pumpkin cookies, making Starbucks Pumpkin Spice Caffe Latte K-Cup at home, harvest scented candles, apple pie, chunky sweaters, boots and my fall inspired Pinterest boards light my soul on fire. This truly is the best time of the year.

- 18 ounce box spice cake mix
- 15 ounce can pumpkin (not pumpkin pie filling)
- 12 ounce bag semi-sweet chocolate chips
- Pre-heat oven to 350 degrees.
- Mix together pumpkin and spice cake until well blended.
- Add chocolate chips to mix.
- Drop cookies on greased baking sheet.
- Bake for 15-18 minutes.
