While my kids don’t have any allergies, we do attend a school where we can’t send peanut products due to other students peanut allergies. I made the Rosemary Olive Oil Quinoa for my Italian Stuffed Peppers. While the quinoa was cooking I also chopped up and sautéed an onion, carrots and celery. Once the quinoa was ready I mixed in the vegetables, add the quinoa to the EatPre ground beef and stuffed these hearty mixture inside of bell peppers. I topped them with a little bit of mozzarella cheese and baked them for 20-30 minutes until the peppers were tender.
