This modern take on a classic Irish meal is much lighter than traditional corned beef and cabbage. In fact, if your kids are anything like mine they are much more likely to munch on corned beef and cabbage when it’s present like this fun snack board.
What is a Charcuterie Board
Simply put a charcuterie board is the culinary art of preparing a variety of meats, cheeses, and often fruit and nuts together on a board.
When you think about making the perfect charcuterie board, you will want to think about different colors, textures, and flavor to make it vibrant and interesting.
These days you can find the concept of charcuterie boards ranging from traditional to sweet. While treat laden boards aren’t technically “charcuterie boards” they are still fun to make and a great way to serve snacks and treats while entertaining.
How to Make a St. Patrick’s Day Charcuterie Board
It’s easy to create a St. Patrick’s Day Charcuterie board with Irish classics like corned beef, cabbage, and Irish cheese. Throw in lots of green veggies and you’ve got all the elements of the perfect snack board!
I’ll show you what ingredients I used on my St. Patrick’s Day Charcuterie board, but of course, any board can be customized to your taste!
- 1 pound sliced corned beef or pastrami
- Irish cheese, like Truly Grassfed Natural Sharp Cheddar
- Soft pretzels
- Mini Potatoes
- Roasted Brussel Sprouts
- 1-2 cups broccoli florets
- 2 green peppers
- Cornichons
- 1 cup sauerkraut
- Green grapes
- Spicy brown mustard
- 1 cup Thousand Island dressing
- Beer cheese
To assemble the board start by slicing off the tops of the green peppers, clean out the center, and place them on the board. Fill the pepper with Thousand Island dressing or beer cheese.
Place a few small bowls on the board and fill with the spicy brown mustard, sauerkraut.
Roll the sliced corned beef up and artfully arrange it on the board.
Slice the cheese and tuck it in around the sliced meat.
Continue filling in the gaps with the vegetables. Continue to adjust and rearrange ingredients until it all comes together to create a full and scrumptious snack board.
Serving Tips for Charcuterie Boards
A general rule of thumb is 3-4 slices of meat per person, and 1-2 oz. of cheese per person. From there you can add in the additional items, also based on your guest count.
Use a large rectangle or round board to pile up all of your ingredients.
Make sure you plan accordingly, your charcuterie board can safely sit out for up to 2 hours at room temperature.
