I have exciting news today and a recipe for a delicious Portobello Mushroom Spinach Sandwich. I am thrilled to announce that I am the new Brand Ambassador for Arnold/Brownberry/Oroweat Breads. As a “Bread-bassador” I’ll be sharing lots of ideas to help you fuel your personal goals and “Feed Your Better.” We all have personal goals we are trying to achieve. They may range from eating more healthy, learning a new skill to spending more time with family. As a busy mom and business owner I often struggle with finding balance for all the things that are important in my life. And honestly, when I can’t keep all the balls in the air my health is the one that usually gets dropped. I tend to skip early morning gym sessions in favor of sleep after late nights spent working on projects. I’ll grab a Coke for an afternoon pick-me-up or I’ll make excuses for why my jeans just don’t seem to fit like they used too.
Encouraged by the Feed Your Better campaign and my new partnership with Oroweat I’m putting an end to those excuses and vowing to work on my “better”one healthy choice at a time. And I’m starting by swapping some of my favorite recipes for healthier versions. I love the Swiss Mushroom Burger from Village Burger Bar, but it’s far from healthy for you. Using the robust flavor combination and Oroweat Sandwich Thins I revamped one of my favorites for a satisfying and healthier meal.
I started with fresh ingredients: spinach, portobello mushrooms, artichokes, garlic, goat cheese and Oroweat Sandwich Thins.
Build your better sandwich by spreading the artichoke aioli on , layering the sauteed spinach and portobello mushrooms and sprinkle with goat cheese for a delicious flavor combination.
Serve with baked sweet potato fries for a delicious and healthy meal.
Portobello Mushroom Spinach Sandwich - Feed Your Better
Build a better sandwich with healthy and fresh ingredients. This Portobello Mushroom Spinach Sandwich on Oroweat Sandwich Thins is packed full of flavor without all the calories.
Ingredients
- Oroweat Sandwich Thin
- Portobello Mushroom
- 1 cup of Baby Spinach
- 1/2 cup Artichoke Hearts
- 1 Tbsp goat cheese
- 1 Small Garlic Cloves
- 2 Tbsp Light Mayo
- Olive Oil
Instructions
- Drizzle olive oil in a small skillet
- Slice and saute the portobello mushroom
- Add the baby spinach and saute until it turn bright green
- Season with a dash of salt a pepper
- Meanwhile, use a food processor to blend the artichokes, garlic clove and mayo
- Spread 1-2 Tbsp of the artichoke aioli on one half of the Sandwich Thin
- Layer the sauteed spinach, mushrooms and goat cheese on the other half
