Build a better sandwich with healthy and fresh ingredients. This Portobello Mushroom Spinach Sandwich on Oroweat Sandwich Thins is packed full of flavor without all the calories.
Serves: 1-2
  • Oroweat Sandwich Thin
  • Portobello Mushroom
  • 1 cup of Baby Spinach
  • ½ cup Artichoke Hearts
  • 1 Tbsp goat cheese
  • 1 Small Garlic Cloves
  • 2 Tbsp Light Mayo
  • Olive Oil
  1. Drizzle olive oil in a small skillet
  2. Slice and saute the portobello mushroom
  3. Add the baby spinach and saute until it turn bright green
  4. Season with a dash of salt a pepper
  5. Meanwhile, use a food processor to blend the artichokes, garlic clove and mayo
  6. Spread 1-2 Tbsp of the artichoke aioli on one half of the Sandwich Thin
  7. Layer the sauteed spinach, mushrooms and goat cheese on the other half
