Strawberry Lemonade Cupcakes

These strawberry lemonade cupcakes are light and fluffy with a hint of lemon that will remind you of a refreshing glass of lemonade on a hot summer day.
Serves: 24
  • Strawberry Cupcakes:
  • Pillsbury Strawberry Cake Mix
  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • ¼ cup lemon juice
  • 4 eggs
  • Lemon Cream Cheese Frosting:
  • Pillsbury Cream Cheese Frosting
  • 2-3 TBSP Powdered Lemonade Drink Mix
  • 4 TBSP Instant Lemon Pudding Mix
  • 1½ cup Whipped Topping
  • Lemon Zest
  • Lemon Slices and Fresh Strawberries for garnish
  1. Preheat oven to 350 degrees
  2. Combine strawberry cake mix, milk, vegetable oil and lemon juice in a large mixing bowl, mix until incorporated.
  3. Add the eggs and mix until smooth
  4. Line 24 cupcake wells with cupcake liners and fill with cake batter. Bake in over for 17-20 mins or until golden brown.
  5. To make the frosting combine the Pillsbury Cream Cheese Frosting, Cool Whip, powdered lemonade drink mix and lemon pudding mix; cream ingredients together until smooth.
  6. Add lemon zest and mix to incorporate.
  7. Pipe the frosting on cool cupcakes, add a lemon slice and fresh strawberry for garnish.
