Mini Shrimp and Grits Tasting Spoons

  • ½ cup uncooked quick-cooking grits
  • 1½ cups chicken broth
  • ½ cup milk
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ¼ teaspoon dried oregano
  • Pinch of red pepper flakes
  • Juice of 1 lemon
  • 1 to 2 drops of Ghost Pepper Sauce
  • ¼ teaspoon Kosher salt
  • 1 pound medium shrimp, peeled and deveined
  1. Combine grits and chicken broth in a medium saucepan. Bring to a boil over medium-high heat; reduce heat and simmer 5 minutes. Stir in milk and butter. Continue cooking an additional 1 to 2 minutes or until thickened. Add salt and pepper to taste.
  2. Combine butter and next 6 ingredients in a large non-stick skillet; bring to a boil. Add shrimp, and cook over medium heat for 3 minutes, (or until almost pink) stirring occasionally
  3. Fill tasting spoons with grits. Top with shrimp and garnish with chives.
