This recipe for Lemon Bars is from my mother’s file and one of my favorites. These bars have the perfect combination of sweet and tangy and are always a hit! These lemon bars are so light and refreshing, I could seriously eat 3 or 4 of these at a time.
Whip up a batch for an afternoon summer treat or bake some to take to the neighbor’s BBQ this weekend. One thing is certain, everyone will love you for sharing these refreshing treats!
Lemon Bar Recipe
1 cup flour
1/2 cup softened Imperial margarine
1/4 cup powdered sugar
1 cup granulated sugar
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
Directions:
Mix the flour, margarine, and powdered sugar. Press dough into an ungreased small square pan. Bake for 20 minutes at 350 degrees. Mix all other ingredients together until light and fluffy. Pour onto crust while hot and bake for 20-25 minutes at 350 degrees. Remove from oven, sprinkle with powdered sugar and let cool before cutting.
Mmm, now you can savor the sweet and tangy goodness of these delicious Lemon Bars.
